1 Tbsp (15 mL)vegetable oil

11 oz (325 g)firm tofu, pressed, cut into 1 cm cubes

1 tsp (5 mL)vegetable oil

3garlic cloves, minced

1 Tbsp (6 g)freshly grated ginger

3 Tbsp (45 mL)Thai red curry paste†

2½ cups (600 mL)boiling water

1⅔ cups (399 mL)canned full-fat coconut milk

1vegetable bouillon cube
-

1red bell pepper, thinly sliced

4.4 oz (125 g)dry brown rice noodles
-
2heads of baby bok choy, ends trimmed
Optional toppings
-
fresh basil
-
lime slice
-
fresh bean sprouts
-
sliced green onion
Directions
- Add the vegetable oil to a large pan on medium-high heat. When the oil is hot, add the tofu. Try to let sit undisturbed, stirring only every few minutes. Continue until lightly golden and crispy on all sides.
- Meanwhile, to a large pot on high heat, add the oil, garlic, and ginger. Let cook for 2 minutes.
- Add the curry paste and cook for 1 more minute, stirring throughout.
- Then add the boiling water, coconut milk, bouillon cube, soy sauce, sambal, and bell pepper. Stir and partially cover. Let the soup simmer for 5 minutes.
- Then add the noodles and greens and let simmer for 3 more minutes**.
- Serve, add the tofu, and your desired garnish, and enjoy!
Notes
- †If you're vegan, be sure to check the ingredient list of the curry paste to make sure it is free from fish sauce.
- ** If you don't have instant noodles that cook within 3 minutes, cook the noodles in a separate saucepan first, and then add them to the coconut broth at the end.
Storage
- This soup is best enjoyed immediately. Otherwise, store in an airtight container in the fridge for up to 2 days.
- Ideally, store the noodles, tofu, and broth separately, and combine only when ready to enjoy.

This recipe is in our regular dinner rotation. Since we have found this recipe, I have to fight my partner (not literally) to let me try any other curry recipe.

Lovely! I recommend using some starch to coat the tofu before frying, it makes it sticky 😍 I added a ton of other veggies I had in the fridge to not let them go to waste, but followed the basic recipe it turns out fabulous
This was pretty good! Different flavors than what I’m use to consuming because I’m Dominican. I would say definitely add some more all purpose seasoning of your choice to jazz it up but this was a solid recipe.

I have been making this recipe monthly or so since pre-pandemic! Love curry and love this recipe. One complication I have is with less broth than ingredients. I have added more coconut milk, water, and red curry paste to try and increase the broth but haven't had much luck - it ends up tasting bitter (which I thought the coconut milk would help with). Do you have any suggestions? More bouillon maybe?
Very yummy recipe. I added mushrooms and spinach to mine and used a bit less heat so the kiddos would eat it. And it was a hit with the 6 year old and almost 2 year old.

A quick, flavorful, and delicious dish! Everyone in my family loved it and it will definitely become a weekday staple. Instead of bell peppers and bak choy I used broccoli, zucchini and carrots which I added right before serving, so the veggies didn't become mushy. Thanks for sharing!

Wowww. This is restaurant quality, for me. I meal prepped this for the week - I made the broth with the red peppers in it and I made the tofu. When everything was prepped, I made 4 containers of tofu and raw prepped bok choy, and my dry noodles. At dinner time I brought a portion of the broth to a boil, dumped in my container and stirred while my noodles cooked. It is so flavourful and cozy.
I started making this a few years ago from the blog. Still in the rotation :) it is always both comforting and light.

Can you use cabbage instead of Bok Choy?
This is one of my favourite recipes. I make it every single week because it is easy to make and tastes great.
My personal modifications are
- only use 1 heaping tbsp of store bought curry paste .
- cook the tofu on a baking sheet in the oven to save time and effort (not much difference from pan frying for use in soup).
- cook the noodles separately to avoid the starchyness the rice noodles add. Fill the empty coconut milk an with water and add that to ensure the soup still gets water added.
Favorite recipe for a rainy day dinner
I use this recipe all of the time. It’s easy and if I have to modify it, it still turns out so good. I use coconut oil and save half of my coconut milk for the end to make it creamier. I’ve made this for friends and family and they all rave about it. It’s become a staple in my home. Many thanks from the east coast of Canada!
Hey, i don't understand, why do you add ginger and garlic, when they're already in the thai curry paste ? It's unnecessary hustle and would even add to the spiciness, which is already high..
Also - you forgot the fish sauce, which is very important ingredient of the thai curries ;p

We love this recipe at home. It's such a good, comforting, nourishing meal and you can use any veggies. I tend to make the tofu into tofu puffs by coating them in corn starch and fry them in a bit more oil. So good! Thank you.

Great recipe! My husband loves it and I love it too because it is fast to prepare. I made the curry for a number of times. Yesterday, I added champignons, replaced rice noodles by Udon noodles (which do not absorb so much souce) and it was even better than before. Question: Could I substitute the red curry paste for green curry paste and maybe use diced shallots instead of ginger, or would that throw off the flavor? I was thinking I could also change out the bok choy for spinach like the recipe suggests, as spinach is more likely suited for a green curry.

I make my own Thai red curry paste and freeze it in portions, but getting good-quality pastes is also great here. This is just the yummiest. We have tried it in so many ways. Substituting ingredients depending on what we have on hand. Every time it's perfect. I just boil the noodles separately now. Kiddos sometimes eat late and by that time the noodles have soaked up all the liquid. We're not vegan so we've tried it with chicken or Paneer. And also Tom yum paste instead of red curry paste. Actually like it better!

Super tasty! I made this today and it turned out great. Couldn't find brown rice noodles so just picked up some that were suitable for soups according to their packaging and added them a bit earlier because of the cooking time.

So I’ve never tried making any Asian type foods before, but I was instantly attracted to the red curry Thai soup! As unbelievable as it looks it really is ready in 15 minutes! Tried this recipe and added a bit of maitake mushrooms and carrots as well as the bok choy and red bell pepper. It was absolutely delicious. I am not a fan of cooking but love eating and lately going out is very disappointing. I've been following Sadia and Pick Up Limes since they started but never got around to actually cooking lol. I just loved watching her videos and food. Well this recipe was absolutely delicious and easier than I could have ever thought! I enjoyed making it and the website calculating for serving size (I'm single so it's always hard finding recipes that don't leave leftovers for days!) was fantastic. I am soooo happy that I have this. I'm ready for the next recipe and her caramel smoothie bowl sounds like my next one :) Love the flavors coming together so perfectly.
A friend dropped in last night for a casual dinner, and he seemed to feel badly that I had been toiling away in the kitchen all afternoon. Little did he know that this sumptuous recipe was quick and simple to make as well as easy to clean. Plus, it kept me full for a really long time! I can't say I'm surprised, though. This is a bomb recipe, that makes me want to have seconds and thirds... The toppings make it feel extra fancy and add interest and flavour to the meal, definitely worth addding in! It does take me twice as long to make as the prep time stated though, even though I am used to cooking and multitasking in the kitchen. But definitely worth it! I also made some small modifications: I left out the sambal since I think it's plenty spicy without already (raised in a Dutch family eating only mild food hehe), used bouillon powder instead of cubes, added one large head of bok choi instead of two, added an extra bell pepper and added 5 noodle nests (so 225 grams) instead of 3. One of the best parts was being able to use my homegrown basil (from seed) for one of the first times this year :D

This has been one of my go-to meals for the last two years, especially when hosting. I just made this again two nights ago for a group of friends who loved it! I like to reduce the amount of spicy ingredients (I usually use dried red chilis instead) going into the soup initially so friends can bring the spicy level to their own taste with some chili oil. Fresh basil and bean sprouts are my favorite addition to this recipe. Thanks for creating this, Sadia and the PUL team!

This has been one of our staples for a while now. Very easy to make, and very very tasty! The noodles get a bit soggy if you have leftover lunch. If you plan for leftovers maybe keep the noodles separate from the soup :)

This is sooo delicious and easy to make! 🤩 We make this all the time and it's perfect for especially those work-from-home lunch breaks. If we don't have all the veggies we just substitute with whatever we have and it works perfectly. ☺️
My absolute favourite recipe! The texture of the bok choi on this is just amazing. I have actually added fresh button mushrooms and contrary to others, I quite enjoy the flavour! Made this last week for my parents and my mom is in love with it and already asked for us to do it again this weekend xD. But I couldn't find the paste in their local supermarket, so we made it from scratch! If PUL allows, I can share my recipe below for anybody who also can't find the curry paste ready made! I might start making it from scratch, because the brightness of flavour was stellar.
My husband usually doesn't really like tofu but he LOVES this dish! We make is almost every week in the colder months! Its so easy and yummy!
This was the first PUL recipe I ever tried and I have zero ragrets. Couldn't even tell you how many times I've made this recipe .. so delicious and customizable (just don't add mushrooms, I did once and I found it threw the flavor off). I have also made it a bit thicker in consistency in order to freeze it then add water when I take it out.
I have made this over and over again, perfect for weeknights when you feel like a takeaway and then you make this and your belly is so much happier.
This recipe is my absolute favorite. I have lost count on how many times I have made it for my family. Full of creamy flavours!

I’m allergic to soy, is there another protein source I could use? Do you think chickpeas would work ok? I love your site and your YouTube channel, it’s been so helpful and such an inspiration. Normally I use the filter for soy-free, but this one sounds so good and I just bought bok choy. Thanks for all the great resources and help!

It is often difficult to get dry brown rice noodles in the grocery stores, most grocery store only keep the unhealthy versions. Nevertheless, this recipe is great! I was a little wary of cooking Thai on my own, but this recipe is so simple & quick :)
