2 cups (200 g)frozen shelled edamame beans

Directions
- In a large pot, cook the noodles according to the package instructions, for us this took 3 minutes.
- Meanwhile, add the oil to a large pan on medium-high heat. When hot, add the garlic and light parts of the green onion. Cook for 2 minutes. Then add the gochugaru and cook for 1 minute longer.
- Drop the heat to low and add the soy sauce, vinegar, and use tongs to add the noodles from the pot to the pan, without draining the cooking water. Mix everything together.
- Add the bok choy and edamame to the pot of boiling water in which the noodles were cooked. Bring to a boil and cook for 3 minutes, or until cooked to your liking. Then drain.
- Serve the noodles in bowls, with the bok choy served alongside them. Garnish with the dark green part of the green onion and sesame seeds if desired. Serve the edamame on the side with a sprinkle of salt overtop. Enjoy!
Notes
- †Gochugaru is made from Korean dried red chili peppers, also known as taeyang-cho. Red chili flakes can be used, but are spicier than gochugaru so it's best to start with less and add more to taste.
- †Black rice vinegar is mostly used in Chinese cuisine and made with fermented glutinous rice. It has a deep, robust flavour and is sweeter than red and white vinegar.

- The noodles are best when enjoyed immediately, but can be stored in an airtight container in the fridge for up to 2 days.

Huge fan of your recipes by the way, I've been doing dozens of them for years, for myself, friends and family. <3 I have always wondered which type of vegetable oil is best for asian recipes, to be neutral tasting, but also kind of healthy. Olive oil is more healthy, but it has heavy taste, while palm tree oil is far more unhealthy. What do you think?

So good. So easy! I love garlic, so this recipe is perfect for me, and I really appreciate that this is a less oily version of the restaurant item. Mostly, love that this comes together very quickly and I can easily add in any veggies!

I’m a brand new Vegan for my health and because I’m heartbroken when I drive by farms with adorable and loving animals that have no idea what’s going to happen to them. This was my first recipe on this app. I love Asian flavors and I’ve honestly never had bok choy before until now! Soooo YUMMY! I was completely satisfied and my gut was happy with no regrets!
Love love LOVE this recipe!! So quick and easy. We’ve tried both methods of this recipe outlined in the video and we definitely prefer the flash fry garlic method the best! A great recipe for me to get my dark leafy greens in since I struggle to meet the orbs in this category!

This recipe is now in my lazy day collection. I used gochujang instead of gochugaru by accident. Instead of pak choy I used spinach. It was super yummy as well. :)
Really tasty! I suggest making sure the noodles you use aren’t the cold-soak type because it’s really hard to readjust the moisture in the rest of the recipe. That said, we accidentally did and it still turned out great!

We make this recipe all the time - such a quick, easy, delicious and adaptable recipe! We use all different kind of noodles, sometimes add in mushrooms or other additions and it always hits the spot.

Delicious! I omitted the spice for my kid and still turned out great! Used rice vinegar (not black version) and it worked out.
There aren't any Taiwanese flat noodles, any Chinese noodle will do.

Very tasty. I added some oat milk so that it's not too spicy and it also got a bit creamy because of that. I really recommend this recipe, even for people who don't like too much spice

Great recipe that i've just made this evening. It's simple and quick to make when you're tired, and it tastes amazing. It's quite spicy - just around my limit, which is perfect. A keeper, for only on nights when we're not going out the next day (there's a LOT of garlic! 😂).

One of my all time favourite PUL recipes, along with the One Pot Creamy Mushroom Pasta. I usually make extra sauce and either add more noodles so I can have leftovers or add some extra veg. Incredibly simple and versatile. If you can find the Taiwanese noodles, they really elevate the dish.

Super tasty! 🔥 I used sliced cucumber instead of pak choy and it was delicious. One tiny thing to improve: Vinegar is listed in step 2, you are supposed to add it in step 3 according to the instructions.

Made this tonight! Did everything the same as her restaurant style version she demonstrated on YouTube which has the same ingredients as this but different cooking method. I did swap the dark soy sauce for tamari to be gluten free. And I didn’t have black rice vinegar so I used regular rice vinegar. Feedback from hubs was “this is freakin’ amazing!!” You got his vote for sure! I enjoyed it very much as well but will test out a few minor modifications in future. Specifically, I don’t love the hint of vinegar taste so I would leave that out. I think my substitutions were a bit less sweet than the original ingredients so I will try a very small amount of maple syrup. And I think I might want even more garlic. Can’t wait to try again!!

Delicious, slurp-worthy recipe! I too was obsessed with street food chowmein, and chilly garlic noodles growing up and in my Uni days. I tried to make this recipe several times but it came out just okay. Thanks for sharing your recipe tastes so similar to the takeout and I can make a healthier version of it right at home. I love the pictures and the make feature so that you know where you are in the cooking process. Also, love the check-off, grocery list and the nourish feature makes you feel you are not dealing with numbers but with nutrition.

It' s a Quick fix on days I am not in the humor to cook a lot.
One can vary a lot for example put a few more veggis to the garlic like bellpeppers etc. Or use Spaghetti noodles.
It' s very tasty and filling. I give it a thumps up.

How do you eat so much gluten and stay healthy?
I don't have an asian grocery store where I live, so I just tried the red pepper flakes - i tried to offset the spiciness by adding some dates and I feel like it worked super well! I didn't have bock choy either but broccoli worked well and tasted excellent 😊

I didn't believe that this recipe would be as easy as it is!! I've made it several times and each time I've gotten faster as I get more familiar with the recipe and the timing.
It's seriously delicious, and I've made it several times in the last few weeks just because I keep getting cravings for it! I tend to use slightly less gochugaru and slightly more garlic, rice wine vinegar (as that's what we have in our pantry), and serve with steamed broccoli and edamame.

This recipe is so delicious. Everyone I have made it for loves it. Even the non-spice lovers. I have made it exactly as shown (bought the ingredients online). I have also altered with whatever asian rice flat noddles are available in my nearby grocery store & have also added chicken or shrimp on the side.

I just made this last night for the first time and it was INCREDIBLE! So easy, so satisfying. I used regular soy sauce and rice vinegar because that's what I had on hand but it still turned out delicious!
PS. I wish those noodles were easier to find in stores, they are heavenly!

I'm obsessed with this recipe. A spicy noodle dish during winter? Yes, please! I threw in some chopped up cabbage and frozen peas and it turned out wonderful. I topped it with a 6 minute egg and some sliced seaweed, but it would shine all on its own. Thank you PUL for another kickass recipe.

Tried the recipe last night and it was delicious! I didn't have in shelled edamame, so I just thawed the edamame beans I had and mixed them in with the noodles instead of serving as a side dish and it was perfect :) Will absolutely make those noodles again!!!

The best quick comfort meal, especially with hectic school or work schedules! It's honestly better than takeout, and the restaurant method in the video is great if you are craving takeout style. Today instead of cooking the noodles separately I just added dried ramen and water to the pan and cooked the noodles that way, tasted really nice too!
I eat these probably once a week now!

Really good...but, the next time I make it I will not add as much chili flakes as this was just way to spicy. Even for my extra spicy loving husband. My lips are still burning. Thankfully I made a lot of bok choy, so it toned it down some. I adjusted the servings to 4 so both my husband and I could have it tonight and tomorrow which then called for 2 tbsp of the gochugaru.....next time I'll do just 1 tbsp.

We had to make some substitutions to what we had on hand, like ramen noodles and shallots. This is definitely going on our weeknight list. Our 1 year old devoured it!
I loved how easy and quick this recipe was, not to mention utterly delicious!! I used brown rice noodles to make it GF which worked very well. I especially loved the addition of edamame in their shell as a side. I hadn't had these in ages and they were a real treat!

Omg this recipe is CRAZY good. I made it for lunch on Monday and twice again since then (and it is only Thursday). Simple with incredible flavor and an absolute breeze to slam together. I couldn’t find black vinegar at my local grocery store, so I just used seasoned rice vinegar and it still worked out beautifully. Thank you for another winner!

So delicious! My husband and I never had garlic noodles before. We used pad Thai rice noodles to keep it gluten free. And we found the gochugaru at Whole Foods. Super easy to make and we doubled it for leftovers (we love leftovers!). The gochugaru is a nice zesty flavor, without being spicy. Thank you SO MUCH for sharing this recipe. Yum!!)

As soon as I saw this video on YouTube, I had to make this! First, I searched for gochugaru and black rice vinegar in the Asian grocery store and then I got to work. This was really good, thank you for posting this recipe. The only change I made was steaming the Bok Choy instead of boiling and serving it with Ume Plum Vinegar, Flax Oil and Gomashio (from the cookbook "The Kind Diet" by Alicia Silverstone, so very yummy). Please post more recipes that only take 15-20 min - I love to eat but I don't like cooking ; )
Great quick recipe. We just used what we had (regular chilli flakes but a little less and mie noodles) and it tastes better than take out. I agree that you need a side of veggie and protein. I think we will just add some bell pepper or carrot and edamame directly to the noodles next time.
