The black bean brownies were the start of a love story between me and legumes and I think we have come full circles with these muffins made with lentils and tahini - WOW. I cut them in half and slathered them with peanut butter and some seeds and went to town! I am gonna keep these on hand for when I have those late nate cravings or for when I want a dessert fo breakfast but with wholesome ingredients!

These muffins are absolutely delicious! I swapped oat flour for wheat flour using a 1:1 ratio and mixed the batter by hand instead of using a food processor. The result? Perfectly fluffy muffins that youโ€™d never guess contain lentils.

Hi Lauren, so happy you're enjoying the taste of the tahini banana muffins! If they aren't rising, it could be due to the baking powder. Make sure it's fresh, as older baking powder may not provide the rise needed. You could also try adding a touch more soy milk for a fluffier texture ๐Ÿซถ

Great snack option for afternoon fika: easy to make, perfect level of sweetness and filling (the chocolate speak for itself๐Ÿ˜‚). Perhaps a tad bitter background flavour owing to the dark chocolate and lentils, but I suppose that I will need to experiment with the type of chocolate used

Great protein bite for the morning. Our bananas were quite ripe and sweet so I could have left out the sugar.

Sweetness level was perfect. I cooked them for 30 minutes and it was still gooey in the center. Maybe the canned lentils weren't drained properly so there was more liquid. Or maybe the silicone liners prevented some heat conduction. ๐ŸŒ๐Ÿง

Hi Nicole, thanks for sharing your experience with the muffins. Indeed excess liquid from the canned lentils might be the issue. If you're using silicone tins, you can try extending the baking time by 5-10 minutes and check for doneness with a toothpick ๐Ÿฅฐ

Amazing! I used a brownie pan and it turned out great. Let it bake for 20min. I left the extra sugar out and it was still sweet enough for me because of the bananas and chocolate.

Hey there, Maaike, the recipe calls for brown lentils, but one of our team members has made the muffins with green lentils rather than brown lentils and they turned out great. We haven't tried with red lentils, but wouldn't recommend it as red lentils can get quite mushy compared to brown or green lentils. I baked them for 25 minutes, but Muffins still came out wet and dense, anything I should do next time to avoid it?
Taste wise they are yummy, will reduce sugar next time.

Hey Rutuja! When the inside of muffins is wet it sometimes means they didn't have enough time to fully bake through. Every oven is different so it could help to turn down the temperature a tad and let the muffins cook for longer if the outside is well-done but the inside is still mushy. If the outside is also soft too though, it can help to increase the heat a touch. Ensuring the muffins are in the middle rack can also make sure the heat evenly hits the muffins if you don't have a convection oven. Hope this helps for now ๐Ÿ˜Š

Hi, had the same issue I made these the first time. Turns out the issue for me was the amount of banana. The bananas I have are big apparently, 3 bananas are way more than 1 cup of mashed banana. Today I measured the mashed banana, I only needed 2 bananas and the recipe turned out great!

So deceptively nutritious! I left out the chocolate. I subbed the coconut sugar for date sugar and added some ground flax for an extra bump in fiber. So yummy. I made a mini muffins and regular sized and both were perfect. Thank you!! Please share more recipes like this!

I made a cake instead of separate muffins, because I only had that kind of baking form. Few minutes extra in the oven until toothpick comes out clean in the center. Worked out very well. Also added some more chocolate (personal preference), used less sugar and instead added 1 date. This is a miracle recipe! Never thought you could add lentils to a cake and actually loving it!

This recipe turned out to be perfect for swapping out the added sugar for date powder! You can use a 1:1 ratio. But because date powder delivers a different kind of sweetness I always prefer 1:1,5 ratio.

Hey there, Ajda, we can't say with certainty as we haven't tested it out. I wouldn't recommend it, as the bananas make up a large part of the recipe (3 bananas in total). If it were just one banana, I think a flaxseed swap would work, but I'm not so confident with this recipe. Might I recommend our Oatmeal blueberry muffin recipe instead? It doesn't use bananas, and yu can always add some chocolate to make it similar to this recipe ๐Ÿค—
