This soup was inspired by Italian wedding soup. Italian wedding soup is a traditional Italian-American soup made with a flavorful broth, meatballs, vegetables, and often some form of pasta. Despite its name, the soup isn't customary at Italian weddings; rather, the term "wedding" is believed to refer to the harmonious marriage of flavours in the dish. We took a vegan spin on that classic and created a hearty and comforting soup, loaded with veggies and topped with vegan sausage, that can be enjoyed as a starter or a main course.

Tasty! I like the savoriness and fat the sausage added. I used about 1/4 head of cabbage instead of endive per the PUL Team reply on someone else’s comment. I ended up adding an extra 2 cups of water.

Hi Natasha! You can leave out the endive or use sliced napa cabbage or radicchio instead. These offer a similar texture and slight bitterness 😊

This soup is really delicious! I made a couple of small changes including frying the mirepoix for about 10 mins on low with the dried herbs. Then I added another teaspoon at the end. I mixed in fresh parsley and basil and the end and chefs kiss 😚

This is my first time using any sort of vegan sausage and making a "soup" recipe from PUL, I'm a lover of curries and have stuck to those recipes for awhile now. This was so delicious! I did not have any Italian spice but used red pepper flakes, thyme powder, salt, oregano, and garlic powder. Truly, very delicious!

Hi PUL, I absolutely love this app and I have recommended it to my fam and friends. Just cooked this recipe for the fam after . We think the taste is a bit bland … so would suggest to fry the spices with the onions and garlics for a stronger flavor :)

In case it helps, the vegetable bouillon cubes and vegan sausages help elevate the flavour of the soup in case either of these were reduced or cut out. Different brands of bouillon and vegan sausages can also vary significantly in taste, so trying a different brand may also help 🤗
