Ingredients

  • 2 Tbsp (30 mL)
    olive oil
  • 1
    medium onion, finely chopped
  • 3
    garlic cloves, crushed
  • 2
    celery ribs, finely chopped
  • 1
    carrot, shredded
  • 2 Tbsp (17 g)
    all-purpose flour
  • 2
    vegetable bouillon cubes, crumbled
  • 5 cups (1200 mL)
    water
  • 1 cup (240 mL)
    soy cooking cream
  • 2 tsp (2 g)
  • 1 tsp (6 g)
  • 18 oz (500 g)
    uncooked vegan gnocchi
  • 2 cups (60 g)
    fresh spinach, chopped
  • 1 cup (138 g)
    frozen green peas
  • ½
    lemon, juiced

Optional garnish

  • chili flakes
  • ground black pepper

Directions

  1. Add oil to a large pot on medium-high heat. When hot, add the garlic, celery, onion, and carrot. Cook for 3 - 5 minutes, until golden.
  2. Add the flour and cook for 2 minutes, stirring throughout to toast.
  3. Add the bouillon cubes, water, cream, nutritional yeast, spice mix, and miso. Cook at a gentle simmer, partially covered, for 10 minutes.
  4. When the veggies have cooked to your liking, add the gnocchi, spinach, and green peas. Cook for 3 - 4 minutes, or until the gnocchi and peas are cooked.
  5. Serve in bowls, add some fresh lemon juice, garnish as desired, and enjoy!

Notes

  • For us, 2 celery ribs weighed 100 g.
  • For us, 1 carrot weighed 100 g.

Storage

  • Store in an airtight container in the fridge for up to 3 days.
  • Freeze for up to 2 months.

Loved the recipe! The lemon is a must, not optional. It came together super easily and it was very hearty. I didn't have cream so I blended up some cashews with water and that did the trick. Also added kale instead of spinach, need to cook it a tad longer with kale but the overall taste was amazing! Thank you PUL team.

Loved it. The lemon is a must in my opinion at the end. I also added chilli flakes and the pepper as suggested. It is cold and I do enjoy some heat in my food and it was the perfect meal for a cold rainy day. It is quite fulfilling with a small portion though so be careful with the suggested portion sizes, but you can always keep the rest as leftover I guess. I did exactly as the recipe suggested but did not think it was thick. But the liquid consistency was fine with me. You may need to add some cornflour if you like thicker consistency in the soup.

This is pretty good, Totally different to what I'm used too. If I was to make it again I'd increase the garlic and reduce the herbs, but that's just for our tastes.

Amazing!!! I loved it so much.
I tripled the garlic, and it turned out very similar in taste to one my favourite childhood soups, which unfortunately has chicken. So this was a very pleasant discovery.

Which kind of miso paste do you use? The red or white?

Also, what can you substitute the nutritional yeast with if you don’t have it? Could you even use cheese if you are vegetarian and not vegan?

Hey Danielle, we tend to use white (also called shiro) miso paste as it's less salty and milder in taste. You can opt for other types, such as red miso paste if you like a saltier taste.

The nutritional yeast adds a creaminess and cheesy taste to the dish which is tricky to mimic with any other plant-based substitute. Perhaps trying finely ground cashews or almonds, or simply omitting the nutritional yeast could work. We only use plant-based ingredients here, so we haven't tried it with cheese. Hope this helps for now, and that you enjoy the gnocchi soup recipe if you give it a try 🤗✨
