Very good base, quick and easy recipe. Love it! Added extra spices for flavour boost.
Time saver tip: Soba noodle at the end l, instead of spatzle. :)

This was decent and a good way to eat a variety of veggies, spatzle turned out well. But feel like it was not super flavorful. Maybe if I used a larger onion there would be more depth of flavor, or maybe more Italian seasoning?

We're glad that the spatzle turned out, Morris! For more flavour, you can indeed consider adding a larger onion or increasing the amount of Italian seasoning next time. You could also try adding more bouillon or incorporating additional herbs or spices to enhance the dish to your taste preferences 🤗

Made this today, it was very delicious! I added a little bit more watter to the spatzle mixture. Impressed how easy was to make the spatzle with squeeze bottle.

Sadly this didn't work for us at all. I added the double amount of water to the chickpea Spätzle Mix because Apotheke comment suggested. The Spätzle did not stay together but we ended up with a thickend soup. I'm married to a swabian and german myself. So we are experienced in eating and cooking traditional Spätzle. We used a "Spätzle-Presse" and my husband cooked the Spätzle. So the only mistake i can imagine is the extra water i added to the dough (my husband says this doesn't make sense as a more liquid dough should stick together even bester, but he never made any kind of vegan spätzle).
The soup was still tasting nice though.

If you give the recipe another try, we'd recommend starting with the listed amount and adding more if needed. Reducing the water amount can help achieve a thicker dough consistency, which may help the Spätzle hold together better during cooking 🤗

Made this recipe today and it turned out delicious…more than I had previously thought it would. However the amount of water (1/4 cup) listed for the spatzle mix was not enough. I used 1/2 cup instead and it was perfect.
