I made an adjustment or two to accommodate allergies and what I had in my pantry, and it was lovely. My husband said he would definitely eat it again, especially the sauce.
I feel like some fish sauce would make this even better and I may try that next time.

Don't know if I reviewed this yet but I LOVE this recipe SO MUCH. It's so quick and easy to make, and SO tasty, and I get a huge pile of fresh veggies in for the day. The sauce is also SO tasty!!! Highly recommend this.

Super yummy! I had to make a couple substitutions as I didn't have two of the ingredients. For agave, I substituted maple syrup, and for Sesame Oil I substituted Safflower Oil. I think next time I'll still use the maple syrup (just personal taste), but think it would be even better with the Sesame Oil. Regardless, my whole family absolutely devoured it.

Delicious - I made mine with egg noodles, (I’m not vegan) pine nuts instead of peanuts, and extra mint instead of cilantro to use what I already had.

Good amount of veggies and really good sauce. I love peanut sauce! We ate this during winter but as a cooling and refreshing dish it would be better for summer.

Favourite lunch/dinner of this past week! Even after two days in the fridge (had to meal prep it a few days ahead), it tasted great. Might feel wasteful to use so much peanut butter in the sauce when it's so expensive, but it is ABSOLUTELY worth it!

Hi PUL team, how to make sure the rice noodles are not sticking to each other and can be well stirred with the sauce? I always struggle with this 😓😓😓

Hey Lia, great question! The key is to rinse the noodles under water, which removes the excess starch that causes them to stick together. If you want to keep the noodles warm, rinse them under warm water; if you prefer the dish cold, use cold water instead. I hope this helps, and that you enjoy the recipe!

Thank you for the quick reply. I’ve tried rinsing with cold water. But maybe I did it too much and the noodles came out mushy but still sticky. I will try the warm water (which a bonus tip since I do prefer my noodles warm 😋) and fewer times.
