I have a very low spice tolerance, so I couldn't have too many of the mushrooms, but I loved the flavor which is impressive since I usually hate the taste of mushrooms! :) I've been looking for some new ways to prepare them and this one worked great!
So tasty! I made some crispy seasoned tofu to have a different texture and I used up some spinach by wilting it with some garlic and soy sauce. The carrot and cucumber added a really fresh crunch but the star was the mushroom. I'll be making this again and again! It's a perfect way to use up veggies and get a good vitamin hit ☺️
Delicious and well balanced. I subbed rice vinegar for mirin, and the chilli paste with the sauce in kimchi.
So easy and quick to make! Perfect for weeknight dinner.

Easy to make and tastes amazing. Uses staples that I always have in the house so definitely being added to the rotation. As a meat eater, I added ground chicken and then added edamame and bell peppers for extra vegetables. Easy to customize.

I threw in my leftover tofu scramble from earlier and it complimented it perfectly.
Cooked all the veggies and the tofu in the sauce for more of a stir fry vibe which works well. Would up the rice quantities though as you need more than specified to balance out the heat of the gochujang in my opinion (but I don't cope well with heat so maybe that's just me 😅 )

Are there any options to swap out the mushrooms for another vegetable?
Love this bowl and flavour combos, cooked it quite a few times already. It definitely takes more than 25 minutes with all the chopping involved and just grabbing ingredients for the sauce and such. It took my partner and me (so 2 people cooking) something around 40 minutes.
