Sun-Dried Tomato & White Bean Dip

Ingredients
White bean dip

½ Tbsp (7 mL)olive oil

1medium onion, chopped

1garlic clove, minced

2 cups (334 g)cooked cannellini beans

¼ cup (38 g)sun-dried tomatoes in oil, drained

1lemon, juiced
-
1 pinchsalt, to taste

1 pinchground black pepper, to taste

2 Tbsp (4 g)fresh chives, chopped
Directions
- Add the oil and onion to a medium pan on high heat. Cook for 4 minutes, or until golden. Then add the garlic and cook for another couple of minutes, until fragrant.
- Add the cooked onion, garlic, and all remaining ingredients, excluding the chives, to a food processor and blend until smooth. Then stir in the chives by hand.
- Serve immediately, or cover and refrigerate for 2 hours or overnight to allow the flavours to meld. Drizzle with olive oil and a bit of balsamic vinegar before serving, if desired. Enjoy!
Storage
- Store in an airtight container in the fridge for up to 3 days.

A fun twist to hummus
This is such a flavourful and creamy dip. I will be making it often!

Dangerously good. Very hard not to do a face plant and eat it all in one sitting!!
Absolutely delicious! I used part of it to thicken and enhance the taste of a basic tomato sauce for pasta and that worked really well. Rest as a base on my sandwich tomorrow!
I think I used a little too much of the sun-dried tomatos, because the colour is a bit different but nonetheless I love this dip. I spread it on bread topped with sauerkraut 👌🏻
I love love love this bean dip!! So delicious & healthy, I like to make a batch of homemade seed crackers (I use this recipe: to it eat with for a more protein-heavy snack. I only wish it lasted in the fridge a bit longer for meal prep as I can't go through it all by myself in 3 days. It would be great to bring to a potluck/event though.
I didn’t have lemon but did add pesto. I had it on toasted Ezekiel bread. So good!

If I could give this 10 stars I would! It’s just bursting with flavour. The lemon and sun dried tomatoes are the stars of this recipe. I think you could layer anything on top of it and it will taste good. It’s just so wow!

Delicious. Reminds me of my childhood, when nobody had heard of hummus but we were mixing white beans into a creamy paste and a sauce made of fried onion, garlic and tomato paste. We’d toast bread, rub it with garlic and add the bean paste and a generous serving of the topping!

just made it with chickpeas instead of the white beans. also very good.
I saute mybonions with portobello mushrooms and added that into the mix. It was phenomenal. Waiting 2 hours before consuming is key.
Just had this on some Swedish crisp bread and the combo is delicious! This is a creamy dip with depth and umami and it works really well with something crispy.

This tasted great! Put it in a veggie wrap. I love to include beans whenever I can, and this was a refreshing change- white beans are so mild it didn't feel bean-forward at all. Just yummy flavors of sundried tomato (ok may have put extra of those). Thx!
I love the tanginess of the lemon and vinegar and the freshness of the chives in this one, it's addictive!
I liked the hummuses best, but this was a welcome alternative!
