Deconstructed Sushi Bowl with Sweet Sesame Dressing

If you love sushi, but don't have the energy to roll it all up, then this bowl is for you. The great thing about the dressing is that it makes it taste like sushi, even if the seaweed is left out. The soy sauce and sesame oil, along with the splash of zest make this dressing one of the best parts of the dish.

Ingredients

Bowl

  • 1½ cups (285 g)
    uncooked brown rice, soaked overnight, drained
  • 2¼ cups (540 mL)
    water
  • 1
    mango, chopped
  • 1
    avocado, chopped
  • ¼
    cucumber, chopped
  • 1 cup (70 g)
    shredded red cabbage (optional)
  • ½
    small red onion, minced (optional)
  • 1½ cups (232 g)
    cooked shelled edamame
  • ½ cup (48 g)
    wakame seaweed salad (optional)

Dressing

Optional garnishes

  • toasted sesame seeds
  • crispy fried onions

Directions

  1. In a medium pot, bring the rice and water to a boil*. Then reduce to a simmer, partially cover with a lid, and cook for 20 minutes.
  2. Meanwhile, make the dressing. Add all the ingredients to a jar and mix well.
  3. Prep the fruits and veggies.
  4. When the rice is cooked, remove the pot from the heat, cover with a lid, and let rest for 5 minutes.
  5. Add the rice to some bowls. Top with the fruit and veggies. Add the edamame and wakame salad, and drizzle over the dressing. Garnish and enjoy!

Notes

  • If unable to soak ahead of time, cook according to the package instructions.
  • * If unable to soak the rice ahead of time, increase the water and cooking time.

Storage

  • Store in an airtight container in the fridge for up to 3 days. Store the sauce separately for freshness.

My non-vegan family loved it, especially the dressing. It’s going into the favorite meals rotation but we’ll probably switch to Napa cabbage and we’ll triple the dressing.

I love this salad! Sushi is one of my absolute favourite things in the world but it's a bit of a faff around to make; this gives me the sushi hit without the mess I usually make. It's simple to put together & packs a good flavour punch. I didn't have seaweed salad but sprinkled nori on it. I think next time I'll use nori sheets to make a little nori wrap out of the salad. Beautiful!

amazing recipe, comes together very quickly, tastes amazing, super colorful and nutritious. I couldn't find seaweed salad at my local grocery store but a ripped up sheet of nori really pulled it together and gave it that sushi flavor. this one's a keeper!

When eating my first spoonful of the dish, I was almost startled by how delicious it all was. I was tasting as I prepped, but the mixture of everything together really makes the dish sing. We did not have wakame so used a furikake mixture we had. Definitely think that because our avocado and mango were both perfectly ripe, the dish was further elevated. I used white rice and made my own wakame salad from dehydrated wakame (not a fan of the store-bought version). I skipped the red cabbage, otherwise I added everything as per the recipe. I added some tamari for extra saltiness because I found the dish not salty enough. Great idea for sushi lovers who can't be bothered with rolling up actual sushi 😀

Hi Ruchi, you can omit the mango entirely for less sweetness or substitute it with another fruit or vegetable that you enjoy in sushi dishes. For example, yams, yellow bell pepper, dragon fruit, papaya, or strawberries might work well 🙂

This has been probably my least favorite meal from PUL but it is still very good. I didn't like the wakame seaweed salad at all, maybe it just the one I bought but I was definitely not a fan. Instead the other bowls I made with the left overs I used pickled onions and that was much more delicious.

The wakame seaweed salad we purchased was from our local grocery store, although the taste can vary in our experience. If you're interested, nori seaweed sheets may be a more desirable alternative. I make this all the time! It's so simple and delicious, and easy to make! It's also so customizable, you can put whatever you want on top! I add tomatoes, carrots or whatever I've got lying around the house, and I add ginger paste Sriracha or chili garlic to the sauce depending on my mood! Thank you Sadia!

Hi there, Anjali! We get the seaweed salad from our local grocery store called Albert Heijn, refrigerated in the seafood section of the store. But for sure, you can definitely sub it out for dried seaweed. Just cut or tear it up and sprinkle it over top your bowl. We hope you enjoy the sushi bowl if you give it a try 😊

This is a PUL recipe I come back to over and over again. I find myself slightly altering some of the ingredients based on what I have on hand at the time but the dressing I follow religiously every time because it's perfect. I even use the dressing on a variety of other dishes as well, especially when I want to spice up a salad with big flavor.
