This dish is characterized by a sumptuous mix of three main ingredients: potatoes, eggplants, and bell peppers. Expertly stir-fried and melded with a savory sauce, it becomes an exquisite side dish. Absolutely delicious! I loveeeee the sauce, only thing I really would’ve changed was actually go with more soy sauce, the flavour by the end was beautiful but a little too light. I will definitely be making this again!

Thanks so much for sharing your experience with the recipe, Téa! More soy sauce sounds lovely. Happy cooking 🤗

Best preparation of eggplant I’ve ever made at home. So good!

OMG every piece of it was amazingly tasty. Also first time ever I liked eggplant in a home cooked dish, this one is nice 😅
Also the potatoes, without boiling, so tasty in the stir fry. One of my new favourites. (I doubled the sauce to combine with tofu)

Mmm thanks for sharing these ideas and your experience with the recipe, Evelyn! So glad it was enjoyed 😊

Easier to make than it seems but still a lot of steps. Tasted nice but compared to other recipes of PUL we would not repeat this one due to the amount of effort versus taste. Definitely worth giving it a try still though

My family really loved it! We don't drink alcohol, so I substituted the wine with white wine vinegar and it worked great! We also smuggled some other random veggies in the pan, too, and added some air fryer tofu. Delicious!

Mmm sounds delicious, Verena - so glad that the stir fry was enjoyed 🥰

Hello, can I omit the coking wine? We don't have that available in my country. Or I could use normal white whine? And the potatoes - they're not supposed to be cooked beforehand, right? Just making sure, I wanna try more meals out of my culture :) thank you!

Hey Hifi, yes you can use regular dry white wine as a substitute for cooking wine, or simply omit it altogether. And you're right - the potatoes don't need to be cooked beforehand as they will cook in the pan. Be sure they're chopped finely though to avoid a longer cooking time. Happy cooking 🤩

Delicious hearty meal. It seems like a lot of steps but it's actually easy to prepare. Next time I'll add some ginger as well.
