Delicious! I’m not a fan of vegan meats, so I just used a block of tofu. It was incredible! My husband and I loved the sugar snap peas!
That was quick, easy and delicious! I added some leftover carrot and broccoli and swapped the sugar snap peas for green beans. I loved it and can't wait to make it again!

The noodles were kind of gloopy, but that might have been because I doubled the recipe so there was more mass in general. Everything else was great.
Tasty, quick, and easy. We found it had a bit of heat but not too spicy which suited us well. I think I'll use pre cooked udon noodles more often since they're so quick.
I made this for the first with green beans instead of the sweet peas, and I realized that I should not have added it in the pan together with the bell pepper. The bell pepper cooked faster than the beans so they were no longer crispy by the time I finished cooking. Nonetheless, this dish taste great because of the sauce that brought everything together so well. This is now the first udon dish that I have come to enjoy eating so far. Still to try the other recipes though.

This was so delicious! Made it as recipe calls, but man is there flexibility in what protein &/or vegetable you can use! This will have a permanent place in the “quick dinner” rotation.
This recipe is great. I’ve done it with tofu and “chicken” seitan and mixed up the veggies. I even had to use a lemon instead of lime once and it was still yummy. It’s all about the sauce. 😍
Added broccoli, discovered I don’t like prepackaged udon noodles but the recipe is delish!

Delicious- the stir-fry sauce is heavenly! Replaced the peas with green beans, the sambal oelek with gojujang- everybody loved it!!
