I could eat this every day. I made 8 servings which fit well in a casserole dish. I wasn't sure if I was supposed to do the mushroom lentil filling all in one layer or not- did a layer of bechamel, noodles, half of the mushroom lentil filling, noodles, bechamel, rest of mushroom lentils, and then 2x noodle, bechamel + pesto, then the mozzarella. I looked forward to lunch and dinner each day afterward because you know leftover lasagna is where it's at! So good.
Really tasty! I halved the recipe as it was just a party of 2 and had leftovers for lunches. Will make again!

Amazing recipe! We took a bite and looked at each other like 👀💕. Quick to make for a lasagna too! We didnt have chili powder so we used a little bit of paprika powder and some chili flakes instead. Turned out amazing. Will be making this again and again!
This was really good. I was worried at first because I thought the Italian herbs were too strong. But once it all came together it was spot on. My daughter liked it but thought it was a tad too rich, but I think that was because I used a pre-made pesto. I didn't tho. Next time I'll make more bechamel and make it saucier. Another great recipe!

Considering it is a lasagna, it takes a lot less time than I’m used to with other recipes and is super easy to make!

One of my vegetarian friends is trying to up her protein intake and, though not a big fan of lasagnas, absolutely loved this recipe! It tastes so good and isn’t too difficult to make, I served mine with some lemon and pepper roasted asparagus and it was *chef’s kiss* 💛

Wow this is such an amazing dish. I used a pesto that I really like and the lasagna turned out amazing. Definitely one to repeat.
Was disappointed in this it lacked flavour not sure if it was under seasoned but felt like something was missing.
I’ve just made this and there’s only two of us so I thought we’d have some for another day. Not so!! It’s so tasty that even though they were full enough they couldn’t resist eating more of it.

OH MY GOODNESS! If anyone is debating to make this, this comment is your sign to do it! This pesto lasagna came out absolutely delicious! I did swap out the pasta for protein pasta (it’s made with yellow lentil) to boost the protein. I also added some tofu on top. My father-in-law also loved it. I will certainly make this one in the future!

Unpopular opinion here, but I hate red sauce. This was a must try for me and I am blown away. I’ve never had a more delicious lasagna. What a showstopper! Make this dish to impress anyone. I was a little nervous that the béchamel sauce seemed runny but it firms up when baking and cooling.
PUL team you outdid yourself with this one! Why have I not used pesto in lasagna before? It makes one of my favourite pre-vegan comfort meals even more delicious. Five out of five on taste, portion size, ease of making and nutrition! ⭐️⭐️

It was really good 😌👌 Easy to make 😏🍃 just couldn’t find vegan cheese (it is a hectic situation in Turkey with vegan products🥲) so added some tofu for extra protein between the layers but of course it didn’t give any effect of melted cheese ☺️ andddd no vegan pesto so made it by myself🤓
My non vegan bf said that the taste overall reminds oysters 🤷🏼♀️🙈😅
I’m not a big mushroom eater but I enjoy the flavor they add so I diced mine finely and they were more hidden in this dish, which was perfect for me. This one got rave reviews from my family even my 2 year old enjoyed it! Will be adding this recipe to the regular rotation.
I had friends arriving from Florence to stay with me for ten days. Decided to cook this on arrival. Both are meat eaters and neither are used to vegan food. To add to the pressure, my dear friend is also an Italian cookery teacher in her own pastry shop. Imagine how delighted I was when they said this lasagna was absolutely amazing and they wanted the recipe!!! It was genuinely delicious and so easy to make! Thank you Sadia and Robin for another brilliant meal!

Loved this recipe. Didn’t quite have enough lentils so added some butter beans in to bulk it out and still tasted great!
The recipe is phenomenal! I added black olives in the lentil sauce and it paired beautifully with everything 👌🏼
