Delicious and quick recipe! I added a whole bulb of garlic (crazy, but we are big garlic lovers in my house!), about 5-6 to the zucchini mixture and 2-3 to the blended sauce. In addition, I added some red chili flakes for spice and more Italian seasoning to the sauce. It turned out wonderfully!
With the easy make it steps this dish comes together so quickly and easily and is truly delicious.

I use to cook them pasta with zucchini and soy cream, but this version is creamier and richer in proteins, perfect!

Creamy and delicious. Loved it! My grocery store didn’t have soy milk, so I used pea milk instead. Works just as well.
I did miss a protein source, so I added mock chicken pieces. Also missed an acid, so added lemon juice. The parm cheese would make it too fatty for my taste, so I replaced that with an extra pinch of nutritional yeast

This was very easy and quick to make. My family loved the creaminess and the overall flavor. The homemade Parmesan on the top added a nice touch. Will.be making it again for sure. 😋

It's nice, but felt like it missed something. Maybe an acid like some lemon? Also added sundried tomato and vegetarian meatballs.
