What could I bake these in if I don't have a muffin tin? I am looking for a make ahead savory breakfast and this looks like it fits the bill

Hey Sarah! If you don’t have a muffin tin, you could bake the mixture in a greased baking dish or a pie dish and cut it into squares after baking. Perhaps a 9x9-inch (23x23 cm) square dish would work well. If you're using a larger or smaller dish, just be sure adjust the baking time slightly. It may need more or less time depending on the thickness of the batter. Keep an eye on it, and check for doneness with a toothpick ☺️

So easy to make and so excellent! I used veggies I had on hand: red pepper, Serrano peppers, diced sundried tomatoes, and artichoke hearts. Definitely will make again.

Hey Phillipa, we haven't tried, although we imagine frozen sweetcorn can work. If you test it out, perhaps just rinse it under warm water and pat dry to remove any excess ice before adding 😊
