½ cup (44 g)raw walnuts, chopped

½ cup (74 g)dried figs, chopped
Wet ingredients

1 cup (240 mL)unsweetened soy milk

⅓ cup (80 mL)vegetable oil
Directions
- Lightly grease a muffin tin and preheat the oven to 350°F (180°C)*.
- Add all of the dry ingredients to a large bowl. Mix until well combined.
- Then add the wet ingredients and mix until just combined. Spoon the mixture evenly into the wells of the muffin tin. For decoration, add some chopped nuts and dried fruits on top. This is optional.
- Bake on the middle rack of the oven for 20 - 25 minutes, or until a toothpick inserted into the centre comes out clean. Let cool, and enjoy!
Notes
- †Use store-bought almond flour, or make it yourself by adding raw almonds to a food processor and blending until you achieve a flour-like consistency.
- * We used top and bottom heating (not fan-assisted/convection).
- To gift these muffins in a jar, watch the accompanying video, or follow these instructions:
- In order for the ingredients to fit, you'll need 1L mason jar. To create even and clean lines in your jar, lower your spoon low into the jar when adding each new layer. Then clean the inside of the glass with a small silicone pastry brush to clear it of any flour residue. Using the pastry brush, level out each layer before adding in the next layer.
- Add the ingredients in the following order: flour (½ cup) > cacao powder > flour (½ cup) > brown sugar > flour (½ cup).
- In a small bowl, mix together the sugar, flaxseeds, baking powder, cinnamon, ginger, cloves, salt, and cardamom. Then add this to the jar. Atop this layer, add the almond flour.
- Use the back of a small ladle or measuring spoon to press down firmly and evenly on the contents within the jar. This should compress all the layers, creating more space at the top of the jar for the following ingredients.
- Finally, add in the chopped walnuts, dried figs, and chocolate chips. Seal the jar with a lid, and decorate with string or flowers.
- Print our ready-made printable PDF template to give with the jar, or write the following instructions on a card yourself:
- To make the muffins: 1) Preheat the oven to 350°F (180°C). 2) Lightly grease a muffin tin. 3) Empty the jar into a large bowl, and stir to combine all the dry ingredients. 4) Add 1 cup (240 mL) plant-based milk, and ⅓ cup (80 mL) vegetable oil to the same bowl, and stir until just combined. For decoration, you could save some chopped nuts and fruits to put on top of the muffins before they go into the oven. 5) Divide the batter evenly into the wells of the muffin tin, and bake in the oven on the centre rack for 20 - 25 minutes, or until a toothpick comes out of the centre clean. Let cool, and enjoy!
Storage
- The cooked muffins can be stored in an airtight container on the counter for up to 3 days.
- The layered jar can be stored in a dark and cool place for up to 1 month.

These muffins are soooo good! 😋 They turned out nice and moist and packed with flavor. I used cranberries instead of figs and they were perfect.

What to do with a bag of organic figs lying around? Make muffins of course. Figs, walnuts, almond flour, chocolate, it's an interesting combination that works. The sceptics complained but ate them. They're not overly sweet, and with the walnuts, I love the crunch. One muffin can be filling, must be the almond flour. It was a perfect little snack while supervising 300 kids at recess.

These are fabulous!!!! Spice is just right and not overpowering, chocolate chips add a richness, and the texture is divine. Crunchy on the outside and moist in the middle. I’m definitely going to make the layered mix in jars for gifts.
I’ve made your typical chocolate chip and blueberry muffins dozens of times. Thus, I wanted to try something new. I gave this one a try as I was just missing the figs. The flavor was okay. I loved the chocolately part and the chocolate chips, but I didn’t like the figs or pecans (I subbed instead of walnuts as I don’t like walnuts). Since the whole idea was a nutty fig muffin, it looks like I don’t like figs in my desserts. I’m still not discouraged from venturing out and trying new, fun recipes! Thank you PUL!

Always a winner. They’re so easy to change-up with different dried fruit and spices.
I’ve also made a batch subbing stewed apple for oil (as a family member needs to reduce their intake) and although it changed the density a bit they still turned out great!
I was inspired by such wonderful comments but when making these muffins the batter seemed much thicker than expected, not like the images at all. I checked and double checked the recipe and I’m confident I followed it to the letter. The results are more rock cake than muffins but they smell amazing nonetheless. Too hot to taste yet…..will keep you posted

This recipe is an absolute gem, probably my favorite you've ever uploaded on the website! Not only is satisfies every single one of my warm-flavour/spiced-desserts needs, but it's a hit in the whole family and trust me when I say that satisfying a non-vegan family with a vegan dessert - well muffin in this case - is a HUGE accomplishment. I've been making this recipe every fall/winter, especially before Christmas, since you uploaded it back in 2020.

I guess fall is calling my name, because I just made these (and ate one still warm from the oven), and they are delicious! I used hazelnuts instead of walnuts but otherwise didn't change the recipe. I have a long week ahead of me, and these are going to be a great thing to look forward to! I've followed PULs for a long time on YouTube, but I don't know if I've ever made a recipe before- that is certainly going to change, based on how successfully these turned out.

Really good and unique! I did have to add a lot more liquid. An extra 3/4 cup almond milk and about 1/4 cup apple sauce. I might do more figs and less chocolate next time, I’ve never had figs baked in anything and it’s delicious! Thanks!
Great recipe. I skipped the flaxseed, reduced oil to 3T and added 1 egg and 1tsp vanilla. Used 1/2 oat flour and 1/2 almond flour for that piece of the recipe. 1/2 cup sugar is enough.
Incredible muffins! I can proudly bring them in to my chef coworker tomorrow to impress :-) I left out the ginger, cardamom and clove due to friends sensitivities and tastes and they still tasted fantastico! Highly recommend!

I love these muffins. I have made this recipe twice to share as Christmas gifts. And for my own family 4 times this month: Twice substituting dried sour cherries. Everyone loves them. One note my batter seemed a little dry so I add a splash more “milk”. Happy New Year. Jennifer
This has become our new favourite muffin recipe!
I made these twice this week and I used oat flour instead of almond flour for one batch, and almond flour for the second batch. The first batch (using oat flour) was definitely more dense, but it tasted almost like a "granola bar muffin" which we didn't mind at all! The oat flour was less expensive, and it didn't impact the taste, just the texture. The second batch (using almond flour) had a more airy texture, but tasted equally delicious.

I tried it with gluten-free all-purpose flour instead of 'simple' all-purpose flour and instead of almond flour. It needed much more yoghurt, I put there like 340 ml :)) it became more solid than I think it should have been, but it came out totally fine. it is delicious!
p.s., it would be awesome if some recipes would have a gluten-free version as well 😇

these muffins are wonderful! They are easy to prepare, moist and flavorful. I added all the spices and used dried cherries and chopped dates since that is what I had and I wanted to make the muffins "right now." My kitchen smelled amazing. The only complaint I had was that my family ate the entire batch in one day.

Made this a few days ago, for my family and it was definitely a hit! Super easy to make, the presentation turned out amazing (loved the added garnish idea on top) and turned out really good too. I expected them to turn out a bit dense, but nope they were perfect!

I subbed coconut sugar for brown sugar, and I've tried them with turkish dried figs once and dried cranberries/golden raisins the other... I made these for my mother in law, she didn't want to make them because the layering was too beautiful haha. After a few months she finally decided to make them and they turned out great! Not too sweet, the perfect amount of sugar. It was her first time baking a vegan recipe and she was really impressed with how good they turned out even though there was no eggs or dairy in it.

Perfect breakfast muffin! I used chia seeds and dried cranberries instead since I didn't have flax seeds or figs. I made these for work to bring to breakfast and everyone loved them! I enjoy secretly sneaking in healthy food into my coworkers. =)
