There are two ways these muffins can be enjoyed: as a gift given to someone, or as a treat to enjoy yourself. Ingredients

Dry ingredients

  • ¼ cup (56 g)
    granulated sugar
  • 2 Tbsp (14 g)
    ground flaxseeds
  • 2 tsp (9 g)
    baking powder
  • 1 tsp (3 g)
    ground cinnamon
  • ¼ tsp
    ground ginger
  • ¼ tsp
    salt
  • ⅛ tsp
    ground cloves (optional)
  • ⅛ tsp
    ground cardamom (optional)

Wet ingredients

  • 1 cup (240 mL)
    unsweetened soy milk
  • ⅓ cup (80 mL)
    vegetable oil

Directions

  1. Lightly grease a muffin tin and preheat the oven to 350°F (180°C)*.
  2. Add all of the dry ingredients to a large bowl. Mix until well combined.
  3. Then add the wet ingredients and mix until just combined. Spoon the mixture evenly into the wells of the muffin tin. For decoration, add some chopped nuts and dried fruits on top. This is optional.
  4. Bake on the middle rack of the oven for 20 - 25 minutes, or until a toothpick inserted into the centre comes out clean. Let cool, and enjoy!

Notes

  • Use store-bought almond flour, or make it yourself by adding raw almonds to a food processor and blending until you achieve a flour-like consistency.
  • * We used top and bottom heating (not fan-assisted/convection).
  • To gift these muffins in a jar, watch the accompanying video, or follow these instructions:
  • In order for the ingredients to fit, you'll need 1L mason jar. To create even and clean lines in your jar, lower your spoon low into the jar when adding each new layer. Then clean the inside of the glass with a small silicone pastry brush to clear it of any flour residue. Using the pastry brush, level out each layer before adding in the next layer.
  • Add the ingredients in the following order: flour (½ cup) > cacao powder > flour (½ cup) > brown sugar > flour (½ cup).
  • In a small bowl, mix together the sugar, flaxseeds, baking powder, cinnamon, ginger, cloves, salt, and cardamom. Then add this to the jar. Atop this layer, add the almond flour.
  • Use the back of a small ladle or measuring spoon to press down firmly and evenly on the contents within the jar. This should compress all the layers, creating more space at the top of the jar for the following ingredients.
  • Finally, add in the chopped walnuts, dried figs, and chocolate chips. Seal the jar with a lid, and decorate with string or flowers.
  • Print our ready-made printable PDF template to give with the jar, or write the following instructions on a card yourself:
  • To make the muffins: 1) Preheat the oven to 350°F (180°C). 2) Lightly grease a muffin tin. 3) Empty the jar into a large bowl, and stir to combine all the dry ingredients. 4) Add 1 cup (240 mL) plant-based milk, and ⅓ cup (80 mL) vegetable oil to the same bowl, and stir until just combined. For decoration, you could save some chopped nuts and fruits to put on top of the muffins before they go into the oven. 5) Divide the batter evenly into the wells of the muffin tin, and bake in the oven on the centre rack for 20 - 25 minutes, or until a toothpick comes out of the centre clean. Let cool, and enjoy!

Storage

  • The cooked muffins can be stored in an airtight container on the counter for up to 3 days.
  • The layered jar can be stored in a dark and cool place for up to 1 month.

What to do with a bag of organic figs lying around? Make muffins of course. Figs, walnuts, almond flour, chocolate, it's an interesting combination that works. The sceptics complained but ate them. They're not overly sweet, and with the walnuts, I love the crunch. One muffin can be filling, must be the almond flour. It was a perfect little snack while supervising 300 kids at recess.

I’ve made your typical chocolate chip and blueberry muffins dozens of times. Thus, I wanted to try something new. I gave this one a try as I was just missing the figs. The flavor was okay. I loved the chocolately part and the chocolate chips, but I didn’t like the figs or pecans (I subbed instead of walnuts as I don’t like walnuts). Since the whole idea was a nutty fig muffin, it looks like I don’t like figs in my desserts. I’m still not discouraged from venturing out and trying new, fun recipes! Thank you PUL!

Always a winner. They’re so easy to change-up with different dried fruit and spices.
I’ve also made a batch subbing stewed apple for oil (as a family member needs to reduce their intake) and although it changed the density a bit they still turned out great!

I was inspired by such wonderful comments but when making these muffins the batter seemed much thicker than expected, not like the images at all. I checked and double checked the recipe and I’m confident I followed it to the letter. The results are more rock cake than muffins but they smell amazing nonetheless. Hi Suzi! In case you use cup measurements, it might help to ensure that the flour isn't too packed in the cup, but rather, gently spooned into the measuring cup and levelled. This will ensure that not too much flour is added, which could be what's contributing to a dry batter. If at all possible, measuring the ingredients in grams/mL ensures even more accurate results (when compared to measuring in cups). Another reason the batter can end up too thick is if the batter is over-mixed. Ideally, try to only stir until the wet and dry mixture are just combined. We hope this helps in case you give it another go!

We get our chocolate chips from an online webshop called de Notenshop (that's also where we get our nuts and seeds as they're more affordable than the local grocery stores). You could omit the chocolate chips too though, simply chop a bar of chocolate into little bits ☺️

Hey Alice, we haven't tested out the muffins with coconut flour so we can't say with certainty. We've heard positive reviews with all-purpose flour, oat flour, and sunflower seed flour in place of almond flour but they'll make the muffins more dense rather than airy. If you give coconut flour a try do let us know how it goes 😊

Hey Gabriela, aw thank you for the very kind words! So glad the PUL recipes are being enjoyed. We haven't tested it out so can't say with certainty, but imagine you could use spelt flour with some adjusting. Reducing the amount of liquid by around a quarter and adding more based on the batter texture may be a good start. Spelt flour has less gluten than all-purpose, so the muffins might have a less fluffy texture and structure after baking. If you test it out, do let us know how it goes 😃

Not only is satisfies every single one of my warm-flavour/spiced-desserts needs, but it's a hit in the whole family and trust me when I say that satisfying a non-vegan family with a vegan dessert - well muffin in this case - is a HUGE accomplishment. I've been making this recipe every fall/winter, especially before Christmas, since you uploaded it back in 2020.
I don't even know how many times I've watched this video, the vibes are just immaculate and it instills me so much peace I find myself going back to it every time I'm overwhelmed. What a great job you've done with it and with this recipe!

A mix of gluten-free flours generally works better than using just one gluten-free flour on its own if you're interested. Really good and unique! I did have to add a lot more liquid. An extra 3/4 cup almond milk and about 1/4 cup apple sauce. I might do more figs and less chocolate next time, I’ve never had figs baked in anything and it’s delicious! Thanks!

Hey there, Ambur, thank you for taking the time to share your experience with it! More figs sound lovely. For needing more liquid, sometimes this happens when too much flour is added. Did you measure using the gram and mL amounts listed, or using the cup and Tbsp amounts?

Great recipe. I skipped the flaxseed, reduced oil to 3T and added 1 egg and 1tsp vanilla. Used 1/2 oat flour and 1/2 almond flour for that piece of the recipe. 1/2 cup sugar is enough.

This has become our new favourite muffin recipe!
I made these twice this week and I used oat flour instead of almond flour for one batch, and almond flour for the second batch. The first batch (using oat flour) was definitely more dense, but it tasted almost like a "granola bar muffin" which we didn't mind at all! The oat flour was less expensive, and it didn't impact the taste, just the texture. The second batch (using almond flour) had a more airy texture, but tasted equally delicious.

Hi Kanako, aw so nice of you to make them for your friend! Roasted pumpkin seeds work well as a substitute for walnuts in the one.

To substitute the almond flour, we've had some reviews with all-purpose flour in place of it, although the muffins will be much more dry and dense. This is because all-purpose flour has gluten and absorbs liquid differently than almond flour. Adding more plant-milk may help a bit, or perhaps oat flour may be a fun alternative to experiment with! Do let us know how it goes if you test it out 😊

Hi there, Laura! Since all-purpose flour has gluten, it helps give the muffins a fluffier texture and structure. Rice flour might not offer this and will likely not absorb the wet ingredients as nicely. We'd recommend trying half rice flour and half all-purpose flour to start or try a smaller batch if possible and see how you like it.

Alternatively, a mix of gluten-free flours generally works better than using just one gluten-free flour on its own if you're interested. If so, here's a flour blend recipe from Minimalist Baker that might help: https://minimalistbaker.com/d…. Do let us know if you experiment with the muffins 😃

Hi there, Nadia! Thanks for the question. We've had some reviews with all-purpose flavour in place of almond flour and it's possible, although the muffins will be much more dry and dense. This is because all-purpose flour has gluten and absorbs liquid differently than almond flour. Adding more milk may help a bit 😊

Alternatively, you may be interested in blending raw almonds in a food processor to make homemade almond flour if that's more accessible. Do let us know how it goes if you give the muffins a try!

I tried it with gluten-free all-purpose flour instead of 'simple' all-purpose flour and instead of almond flour. It needed much more yoghurt, I put there like 340 ml :)) it became more solid than I think it should have been, but it came out totally fine. it is delicious!
p.s., it would be awesome if some recipes would have a gluten-free version as well 😇

these muffins are wonderful! They are easy to prepare, moist and flavorful. I added all the spices and used dried cherries and chopped dates since that is what I had and I wanted to make the muffins "right now." My kitchen smelled amazing. The only complaint I had was that my family ate the entire batch in one day.
Next time I will certainly double the recipe. Thank you for adding a wonderful new fall muffin to my collection.

Hi Sing! Thanks for the questions. We can't say with absolute certainty as we haven't tested out the muffins in the microwave. The cook time would likely be much less though. Perhaps trying a small batch of the recipe in short intervals may help if you experiment with it 🙂

I've made these twice so far, and they are delicious! Perfect with a cup of coffee or tea. I subbed coconut sugar for brown sugar, and I've tried them with turkish dried figs once and dried cranberries/golden raisins the other... I like the cranberries better here, but both were good! :) Thanks for the great recipe!
