Vegan Cinnamon Bun Dough

  • 1 cup (240 mL)
    unsweetened soy milk
  • 1 Tbsp (12 g)
    active dry yeast
  • 3 cups (414 g)
    all-purpose flour
  • ¼ cup (56 g)
    granulated sugar
  • 2 tsp (9 g)
    baking powder
  • 1 tsp (6 g)
    salt
  • ¼ cup (54 g)
    refined coconut oil, melted

Cinnamon Bun Filling

Sweetened milk

  • ¼ cup (60 mL)
    unsweetened soy milk
  • 1 Tbsp (15 mL)

Icing

  • 1 cup (134 g)
    powdered sugar
  • ¼ cup (56 g)
    unsalted vegan butter
  • 1 tsp (5 mL)
    unsweetened soy milk
  • 1 tsp (5 mL)
    clear vanilla extract

Directions

  1. Heat the milk in a saucepan until just steaming*. Do not let simmer! Remove from the heat, add the yeast, stir, and let sit for 5 minutes.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. When the yeast mixture is foamy, add to the flour mixture along with the melted coconut oil. Mix together.
  4. Then use your hands and knead for 3 - 4 minutes until smooth. Add a bit more flour if needed, the dough should be slightly sticky but not stick to the bowl. Cover with a damp cloth and let it rest in a warm place for 1 hour.
  5. Lightly grease a baking dish that's about 10½ x 8 inch (27 x 21 cm), or big enough to easily fit all the rolls.
  6. In a small bowl, combine the brown sugar, pecans, and cinnamon. Set aside.
  7. Transfer the dough onto a floured surface. Use a rolling pin to roll the dough into a ½ cm thick rectangle of 30 x 40 cm.
  8. Spread the coconut oil across the rolled-out dough. It looks like a lot, and that's okay!
  9. Sprinkle the brown sugar and pecan mixture evenly overtop the rolled-out dough.
  10. With the longest edge of the rectangular dough closest to you, begin to roll the dough.
  11. Cut the rolled dough into 12 buns, about 1½ inches (3 cm) thick each. We did this by cutting the roll in half, then in half again, and then cutting each of those quarters into thirds.
  12. Place each bun into the baking dish, then cover it with a damp cloth and let rest in a warm place for another hour.
  13. While the buns are resting, mix the remaining milk with maple syrup. Set aside.
  14. Preheat the oven to 350°F (180°C)**. Bake buns in the centre rack of the oven for 10 minutes. Remove from the oven to spoon the sweetened milk mixture over the buns.
  15. Return the cinnamon buns back to the oven to bake for an additional 20 - 25 minutes, or until the tops of the buns are golden.
  16. While the buns are baking, whisk together the icing ingredients using an electric hand mixer. Add a splash more milk if a thinner consistency is preferred.
  17. When the buns are removed from the oven, let them cool slightly before smearing the icing overtop. Enjoy!

Notes

  • Refined coconut oil is coconut oil that doesn't smell or taste like coconuts. If you prefer a distinct coconut taste, use unrefined coconut oil instead.
  • Try infusing the milk with cinnamon sticks, ginger, crushed cardamom pods, or chai-spiced tea bags for more festive tasting buns.
  • * The aim is to achieve a “lukewarm bath” temperature. If it’s too hot, let it sit to cool slightly. Milk that's too hot may kill the yeast.
  • ** We used top and bottom heating (not fan-assisted/convection).

Storage

  • Store vegan cinnamon buns in an airtight container on the counter for up to 3 days.
  • Store rolls without the frosting in the freezer for up to 1 month, and reheat in the oven when ready to enjoy.

We haven't had a chance to test out the recipe with gluten-free flour. A mix of gluten-free flours usually works better than using just one flour on its own though. If you experiment with any modifications we’d love to hear how it goes!

Yes, you can use any unsweetened milk to make vegan cinnamon buns! If you’re using coconut milk, the thinner varieties that come in cartons will work better than the fattier varieties that come in cans.

Can I make vegan cinnamon rolls without coconut oil?

Vegan margarine or butter can be used instead of coconut oil in this recipe.

Hi Kristin! Sounds like the buns are too ooey-gooey! While kind of dish are you using to bake them? Metal or glass or ceramic? Are you storing them at room temperature or in the fridge, and are they covered or wrapped? Condensation might be forming as the buns cool, perhaps from storing while they are warm. You could also skip the sweetened milk step, or use less to help prevent excessive liquid, or you can bake them for a few extra minutes to help them absorb the milk 😊

Hi Kristin, yes you can rest the rolls In the fridge overnight. It's best to store them wrapped tightly and allow the buns to warm up, such as for half an hour, when removed from the fridge. We wouldn't recommend resting them for more than 15 hours or so for optimal freshness 😊

Such a good recipe! These turned out beautiful! I made these as a surprise for my other half and the surprise lasted until they were in the oven as they smell so good 😂 They are quite hands off and relatively simple. I didn't get my dough perfectly square when I rolled it out, but even the scraggy end bits rose and filled out the dish. Such a nice treat with a cuppa!

Gluten free flour does NOT work with this recipe ): the dough was super crumbly and got no rise at all. Texture was overall awful, maybe it's the blend I used. It's a delicious recipe that I've done multiple times but I would strongly recommend going with an actual gluten free recipe if you wanna make gluten free cinnamon rolls!

Hey Gabija, oh no! Did your yeast mixture ever get foamy? If not, it's likely the yeast was not live. It may have been that it was old or stored incorrectly? Depending on where you live, the room temperature will also affect rising time. If it's been cold lately, the dough might need more time to rise. You could place it somewhere a bit warmer to help the yeast activate. We hope this helps if you give it another try 😊

Quick question, because I am always afraid of making mistake when freezing pastries...
You say it keeps up to one month in the freezer, what if I let them longer than this ? Do you recommend leaving them to thaw in the fridge for a couple of hours or to directly take them out of the freezer and reheat them ?

Also, if I swap the cinnamon butter for some chocolate spread, does it freeze well (in your experience), or the storebought chocolate spread cannot be frozen safely ?

We find that most pastries like cinnamon buns lose their quality if frozen for more than one month, but it can certainly last longer. You can leave the cinnamon buns in the counter for a couple of hours to thaw or reheat them directly from frozen (ideally in the oven, covered so it doesn't dry out). As for the chocolate spread, we imagine it can be frozen with success, though we haven't tried this ourselves. Happy baking! 🤗

I love these cinnamon rolls. I must have made them 30x now, however I like them for breakfast on the weekend and I was wondering if I could cut out some of that wait time by getting the dough ready in a bread machine from the night before. Is that possible?

Would this alter the recipe at all?

Hey Athina, the reason we use coconut oil or vegan butter is because they're solid at room temperature, which helps to keep the filling and buns firm. For that reason, I wouldn't recommend a liquid vegetable oil, but you can always try! 🤓 I'm so glad you enjoyed the recipe with the butter 😊

I made these yesterday in Berlin when I had my colleagues over for brunch during a stormy winter day with rain, snow and hail outside. I added a but more nuts and also included chopped walnuts, since i only had a few pecans left. Worked out great. Everybody looooved them and I could share the link to your website. This has been my go-to comfort recipe for a long time now! The milk mixture is just so smart and makes them oh so delicious <3
I personally don't need the frosting as they are already pretty sweet for my liking. Since I made those maaaany times, here are some Ideas that I tried out to alternate them a little: For the filling I use less brown sugar, instead I mix like a Tbsp of agave sirup with the melted coconut oil before spreading it out on the dough. To compensate the sugar so that I have enough filling, I like to use about 150g. grounded nuts like hazelnut or almond. I also did a version with cranberries in the filling and a little bit of lemon zest which was also a hit!

Hey Kate, oh shoot! We prefer to dissolve the yeast first because the foaming provides proof that the yeast is alive and ready to work. Did your yeast mixture ever get foamy? If not, it's likely the yeast was not live (may have been that it was old or stored incorrectly?). We have heard that you can add yeast directly to the mixture without dissolving it, but haven't personally tested it out 🙂 We hope it works if you give it another go!

Hi Kate, I tried both versions with & without putting the yeast in the milk and for me it worked better with just putting it into the flour directly! I'm pretty sure it depends on the yeast itself, my package specifically said to not soak it so yeah... hope it works next time!

The best cinnamon roll i've ever made ! ( and cinnamon roll is one of my favorite on fall-winter season so i've made a looooooot of them )
My friends love to take individual cinnamon roll from the city center coffee shop when they come over to play RPG at home but i can't eat them.
So i made your recipe, the dought is absolutly lovely and easy to make. I know my taste so i've just made the filling with less sugar and more butter ^^ ( equal part sugar and butter with a table spoon of cinnamon and the icing is delicious with marple sirup ! ) your video are so lovely and nice to watch step by step

Hi Kirtida, the sugar and flour help add a delicious sweetness and fluffy texture to the cinnamon buns so we cannot guarantee success with substitute ingredients. Sometimes our baked good recipes are delicate!

At PUL, we believe food serves to 1) nourish the cells, and 2) nourish the soul. In the first instance, we might think of nutrient-dense foods that help our bodies function at the most optimal (such as veggies, fruits, legumes, etc). In the second instance, we might think of foods that we give ourselves permission to enjoy, even if they're not traditionally deemed nutrient-rich. These are foods we may enjoy because we feel like it, are enjoying food in the company of others, etc. So we don't see foods as 'good' or 'bad'. As 'healthy' or 'unhealthy'. Hi Kirtida, Hi Sadia,

I always use whole grain spelt flour and it works fine in all receipies! In the dough I used 30g of honey (I believe it should work with marple syrup as well, to keep it vegan).
In the filling I replaced the brown sugar with 15 mejool dates, which I mixed together in a food processor into a paste with melted margarine and the cinnamon. I skipped the frosting.
It is not very sweet, if you usually consume sugar/sugary things you might want to increase the sweetness a bit (use more mejool dates or make it with the frosting).

It was delicious! :)

Hey Nickesha, yes you can rest the rolls In the fridge overnight. Make sure to store them wrapped tightly, and allow the buns to warm up (such as for half an hour) when removed from the fridge. We wouldn't advise resting them for more than 15 hours or so for optimal freshness 🙂

Hey there, Emily, we're not familiar with active wine yeasts being used in baking and we wouldn't advise using it. Active wine yeast will likely impart an alcoholic flavour which may be undesirable. Are you able to find any yeast called "baker's yeast"? This will work as well. Alternatively, you can try adding a bit more baking powder, or baking soda with a bit of lemon juice. In this case, you can skip the resting steps. The final result will be a bit different in texture and taste, but I think just as delicious. I hope this helps! 🤗

I made these for my family Christmas potluck, and they went down a treat! I'm not used to working with dough and so was a bit intimidated at first, but after giving it a test run and making a few tweaks, they turned out to be easy and delicious! I used walnuts instead of pecans, and melted vegan butter instead of coconut oil for the filling.
I definitely recommend trying this recipe!

Have been wanting to test this recipe for more than a year! Now that I moved to a new house with an oven (this is such a game-changer), I was finally able to make those delicious buns for Christmas. The flavor was amazing! Because I don't like treats to be too sweet, I didn't add maple syrup to the milk (as suggested by the PUL team in the comments) and skipped the glazing. It was just perfect! My only regret is that they weren't as fluffy and soft as I expected, but I think it's due to the yeast I used (not sure it went that well), and maybe I overcooked the buns. I followed the cooking time instructions, but I will reduce the cooking time next time I make them.

Hi Jessica! We haven't tried it ourselves, but you could make parts of the recipe in advance if desired. We'd recommend storing the milk or icing in an air-tight container in the refrigerator for up to 3 days for optimal freshness. The cinnamon bun filling could be stored in an airtight container on the counter or in the fridge. If the coconut oil solidifies and the filling becomes chunkier, giving it a good stir with a warm utensil (such as heating the utensil base by pouring boiling water on it) should help 🙂

For the dough, we wouldn't advise making it more than two days in advance to ensure it stays fresh. You could experiment with refrigerating it or freezing it. We've taken a look on the internet and there seems to be a bunch of ideas for storing cinnamon bun dough advance 😃 Do let us know how it goes if you give the cinnamon buns a try!

Thanks for the reply! I made them, then cut them and placed them covered in the baking dish overnight. Let them sit out for an hour in the morning and continued to cook them per instructions. They were delicious and everyone loved them. Next time I’ll compare and make it in one go :)

yay! if you don't like overly sweet foods, I recommend using less sugar, skipping the icing or using applesauce instead of sugar and butter in the filling. I used applesauce and still found the result almost too sweet. the dough is heaven, though :D

These are absolutely amazing! It has taken me a while to get down to making them and it looks like I have wasted a lot of time :) They are so fluffy and actually quite easy to make. I have used walnuts because I had no pecans and made a simpler icing from powder sugar and lemon juice, which broke the sweetness of the buns. Turned out fantastic!
I have been following your work since the beginning of the pandemic last year (funnily enough found Pick Up Limes searching for plant propagation :D) and although not even vegetarian, I really love your recipes and videos. Have used them repeatedly and was never disappointed. It is really great to see you develop :)

I made these this weekend and I am amazed on how well they turned out. I don't think anyone would guess they are vegan. I decided to skip the icing since they were decadent enough already. Thank you for this wonderful recipe!
My only suggestion would be to line the tin with parchment paper because in my case greasing it was not enough, the sugar caramelized and I had to struggle a lot to get the buns out.

The best cinnamon buns i've ever tried - and I've tried a lot, since I'm from Denmark, where cinnamon buns are very loved and a staple in almost every bakery.

Absolutely love this recipe! I've made it twice so far and both times have turned out great. I don't have powdered sugar so I didn't make the icing, but these still taste so good even without it!

I've made these once before and now I had ti make them again. They turned out just perfect, just as gooey and delicious as your pictures make them to be! 😀 It is a process but beyond worth it. Recipe is definitely a keeper! Thank you so much for sharing all these beautiful recipes and all the hard work that you both pour into PUL. 😄

An insanely delicious recipe! I added coconutflakes for extra texture and flavour.
One thing you might want to keep in mind is, when making the dough, make sure it isn't too dry. Because when it is, and you'll roll the roll to cut into smaller parts the dough will tear open.

Came on here, for this amazing recipe, but ended up spending awhile looking at the new web!!
Just wanna say a hug congrats to this new website, even tho this website has not been officially launched yet.
