Another lovely recipe for the homemade kimchi! I couldn't find enoki mushrooms, so used chestnut mushrooms instead. I added these in with the onions as I wanted them to cook down a bit for that meaty bite. The smoked tofu was a nice addition too, and made this such a filling dish.
I love this recipe and have made it multiple times, sometimes with veggie variations like tonight's chestnut mushroom switch.
I have a question though, this is the first time I used rice that I had previously cooked and had in the fridge. Now that I have reheated this rice is it safe to reheat again or should we have any leftovers cold? I tend to err on the cautious side with rice.

Just came back from a week in Seoul and immediately bought kimchi and Gochujang. This was a great easy first dish to try and cook. Great recipe for leftover rice.

Sooooo good! I had to use sauerkraut because the store was out of vegan kimchi!! I added a bit of extra heat and it definitely didn’t ruin it! This goes into my rotation 😋
Lovely recipe! Used leftover Indian take out rice, which made this a 10 minute worknight meal. Fast and so much flavor!
Very nice! I had to add more kimchi, soy sauce and the paste and I didn't use the whole rice I cooked.
Maybe it's the Moroccan in me but I needed more flavor 😁 but it was definitely a hit and we finished everything
Excellent. Much better than any kimchi rice I've made in the past - I think the gochujang paste makes a big difference. Very easy to make and I made a batch of it so I could have leftovers for lunch, and freeze some as well. One to add into the rotation

i’ve made my fair share of kimchi fried rice but this was my best one yet!! i think the simplicity of it really lets the kimchi shine it was delicious😋
I used regular mushroom and fake chicken pieces, really liked how it turned out, it’s the perfect amount of spice! It reminds me of something I had at a fancy Korean restaurant once.
I prepared it with sauerkraut instead of kimchi, I really like it!
This is going to be a new addition to our dinner rotation. Easy to make and so much flavor!
